Another one of the best kept secrets in the world of Italian Sparkling Wines is Prosecco Superiore. This is not the mass-produced Prosecco that is frequently used in Aperol Sprtiz or Mimosa formularies.

This is a sipper and a toasting sparkler whose fruit is hand harvested by “heroic viticulture” in mineral rich and nutrient intense soils similar to those which produce Sancerre in the Loire region of France. The steep, terraced "hogback" hills (ciglioni) between Conegliano and Valdobbiadene create diverse microclimates and soil types (marl, limestone), forcing manual, "heroic" viticulture, which yields superior grapes.

 

Varied soils (clay-dominant marl, limestone) and high elevation lead to complex aromatic compounds and balanced acidity, unlike the mass produced Prosecco from the flatter plains areas.
